As dear hubby had harvested a few Bramhi saag in our balcony garden, I thought of cooking it today. I had a piece of pumkin with me which I thought would be the best vegetable to be cooked with the saag. Bramhi saag has got innumerous health benefits like controlling of blood sugar, treating anxiety, stress, Alzheimer’s and also is known to boost memory. It has it’s anti-oxidant property as well and boosts immunity. So let’s see how to cook it. You can serve it with rice and have it at the beginning of your lunch to make it more wholesome. The addition of pumpkin makes the dish voluminous and imparts a sweetness to the dish. Also to add as a note, today is 7th day of nationwide lockdown. So, minimalism is the key to survive and the strategy in every household kitchen😲

Time required to make Bramhi saag with pumpkin: 20 minutes

Ingredients required to make Bramhi saag with pumpkin for 3 people:

  • A small pumpkin – cut into cubes
  • Bramhi saag
  • 3 cloves of garlic
  • 1 green chilli
  • Salt to taste
  • Mustard oil

Bramhi saag with pumpkin – The recipe:

  • To begin with, soak Bramhi saag in salted water for 30 minutes
  • Then wash in fresh water and chop into pieces
  • Heat oil in a pan, add chopped garlic. Let it burn a bit (enjoy the smell, I live it!!)
  • When garlic is reddish brown, add pumpkin cubes and let it stir fry in medium flame. Wait till the pumkin starts to caramelize on it’s surface
  • Add salt to it. Stir
  • Add the clean Bramhi saag. Stir a bit. Let it cover cook until the pumkin is soft and cooked along with the saag. Remember not to make the pumkin mashed or too soft. It should retain it’s shape in the process. Add a little water in between though
  • Add green chilli and stir for 2 more minutes till all water evaporates

So is ready to serve your healthy dish Bramhi saag with pumpkin.
