As a mother and a wife, I always strive to serve healthy food to my family. And when it comes to cakes, I always try to be innovative and discover healthy recipes for cakes. One such recipe to serve a healthy cake is this recipe of mine called ‘Carrot coconut cake recipe – healthy version’. It’s really very dear to me and let me share my ‘Carrot coconut cake recipe – healthy version’ here.
Carrot coconut cake recipe – healthy version – Total preparation and baking time – 20 + 40 minutes
Carrot coconut cake recipe – healthy version – Ingredients for 6-7 slices baked in a 9″ pan:
1. 1 and 1/4 cup of all purpose flour or maida
2. 3/4 cup of wheat flour or atta
3. 1/2 cup refined sugar (powdered)
4. 1/4 cup softened butter
5. 1 whole grated carrot
6. 3 tsp of grated coconut
7.1/4 the slice of an apple – grated
8. 2 eggs
9. 1 3″ cinnamon stick
10. 2 cups of hot milk
11. 2.5 tsp of baking powder
12. 1/2 tsp of baking soda
Carrot coconut cake recipe – healthy version – The method:
1. Take a mixing bowl and add powdered sugar and butter and beat
2. Add 2 eggs and beat
3. Add sieved flours, baking powder and baking soda. Beat
4. Add milk and beat
5. Add grated carrot, apple and coconut and beat again to form a nice batter
6. Pre-heat oven at 180 Celsius
7. Grease the inner linings of cake tin with butter. Pour in batter. Put inside the oven at 180 Celsius for 40 minutes to bake
8. Take out the cake and check if it’s baked through properly
Your carrot coconut healthy cake is ready to eat. It’s crisp outside and soft inside. Just love the product!
