Chicken Tikka Biryani

India’s Global Kitchen Blog is inundated with several Chicken biryani recipes now. I thought why not yet another one? So many varieties of Biryani can be actually cooked, each with it’s own characteristics and flavour! This Chicken Tikka Biryani is a mess free biryani recipe I felt and is cooked in less time. Instead of stir cooking the chicken, just grill the chicken pieces in the oven. The chicken pieces come out juicy and soft. Make a separate gravy with the rest of the marinades and beaten curd. And here the chicken cooked is oil free. So, yes, it’s another benefit of cooking Chicken Tikka Biryani. I have used a pinch of edible orange colour for a brighter colour but you may skip it and use Turmeric powder. I had purchased the colour while making Bombai halwa. So had it anyways in home. You may have this Biryani with a bowl of Salan and raita as accompaniments.

Time required to cook Chicken Tikka Biryani for 3 – 4 people: 1 hour

Ingredients required to make Chicken Tikka Biryani:

  • Boneless chicken pieces – 400 gms
  • 2.5 cups long grained rice
  • 1 heapful tsp of ginger, garlic, dry red chilli paste
  • 2 big onions – cut into things slices/rings
  • 1 cup beaten curd
  • 1 tbsp screw pine water or kewra jal
  • 1/2 tsp orange colour
  • 1 tsp biryani masala
  • 5 – 7 saffron strands
  • Pinch of nutmeg powder, 1/2 tsp fennel seeds powder, 1/2 mace
  • 1 tsp black pepper powder
  • 2 red dry chillies
  • 1 bay leaf, 1 mace flower, 1 black cardamom, 1 green cardamom, 5 cloves, 5 black peppercorn, 1 cinnamon stick
  • Salt to taste
  • Refined oil or ghee
  • Handful of kasuri methi or dried fenugreek leaves

Chicken Tikka Biryani – The recipe:

  • Marinate chicken pieces with 1/2 cup curd, 1/2 tsp biryani masala, ginger garlic paste, black pepper powder. Refrigerate for half an hour. Take them out. Insert the chicken pieces into wooden skewer. Preheat oven at 180 C. Then, in lower rack grill for 25 minutes. Turn the skewer upside down, grill for more 10 minutes. Your Chicken Tikka is ready
  • Now, pre-soak rice for 30 minutes in water. Drain water and keep aside. In rice pot, add water, enough salt, the whole spices (cardamoms, cinnamon, etc). Bring to boil. Add the rice and cook rice till 90 – 95 % cooked. Drain water and keep aside
  • In a wok, heat oil or ghee and fry onion rings until brown. Keep aside
  • Store half of the left over oil used for browning the onions
  • In the same oil, add 1/4 the of the onion browns, the left over marinade. Add 1/2 tsp biryani masala. Stir cook till oil starts to separate
  • In a mixer, add remaining 1/2 cup curd, fennel seeds, 1/2 mace, a little of nutmeg powder. Beat it well in the mixer
  • When oil starts to separate in the wok, add beaten curd over slow flame. Add a little more water and cook on medium flame till oil starts to separate. Add crushed kasuri methi and simmer for 2 more minutes. Sprinkle kewra water. Cover it with lid and switch off the flame. The gravy is done
  • Now, the dum part. In a thick bottom Biryani pot, add the grilled chicken pieces. On top add the gravy. Add cooked rice. Add onion browns, left over oil, 1/2 cup hot water soaked with saffron, on top. Cover with an airtight lid. Cover cook on low flame for about 30 minutes. Once done, let it rest for sometime
  • Your Chicken Tikka Biryani is ready to be served!

You may additionally serve boiled eggs along with the Chicken Tikka Biryani. Chicken chaap and Raita can be offered as side dishes to it.
