Quest for making Domino’s like pizza has made me quite a bit of good pizza maker these days. Saturday mornings mostly are reserved for making them for my little munchkin and her same aged visitors to our home. The smile and the clean plates always makes me more encouraged to make better pizzas next time. I shared this recipe in my blog earlier. But with time the recipe surely has evolved with experiences. Here’s a new post compactly defining the pizza making process from scratch only for you. Hope you like it!

The pizza dough:



The Base of the pizza is the heart of the dish. A soft yet crispy base is all I desire. To make the pizza dough, in a bowl add 1.5 cup of maida or all purpose flour, .5 cup of wheat flour. Add instant dry yeast, 1 tsp sugar, 1 tsp salt, some oil and warm water into the flour. Now knead a dough well. Make a large ball out of it.



Here oil used can be olive oil. But I have used sundrop heart oil. Wheat can be added to make it a bit nutrituous. But texture wise, the full maida ones give better outcome.



Brush some oil over the dough and keep it in a bowl. Cover it with a lid and let it rest for 30 minutes in a warm place. Now, take out the dough as you see the size of it has increased to double. Punch the dough to take out all the air trapped inside. Now at this stage you may want to repeat the rising phase. Though this dough is good to go. I do both as per the time I do get in my hand.





The pizza sauce:



Heat some butter or oil in a pan. Add garlic slices (take 14 – 15 cloves of garlic) and let it turn a bit red. Make sure garlic does not burn. Add chopped onions (1 big onion) and wait till it turn a bit pink. Add chopped tomatoes (1 – 2 big) and let it cook until the rawness disappears. Add salt, 1 tsp chilli powder and mix well. Cover the pan and let it cook on slow flame till oil starts to separate from sides of the pan. Sprinkle 1 tsp oregano mix (I use keya’s pizza mix) on top. Mix well and let the gas go off! The pizza sauce freshly made with fresh tomatoes is ready





The pizza roll out and baking:

On your pizza stand, sprinkle some flour. Flatten the dough and spread it on the pan with hand to cover the pizza pan top. You may choose to roll out a flatten bread with help of a roller but the hand just works fine 🙂


Now take scoops of the pizza sauce and spread it evenly on top of the pizza base. Place grated cheese on top all over. Now arrange onion cubes, capsicum cubes and de-seeded tomato cubes on top. Put the pizza inside a pre-heated oven. Bake at 180 Celsius, for 20 -22 minutes or till the cheese melts and the pizza base just turns golden. Make sure you do not over cook the pizza.

So once done, take the pizza out of the oven. Make slices with the help of a pizza cutter. Spread some oregano mix (filled with oregano, pepper, salt and chilly flakes) on top. Your home is already filled with the smell of melted cheese and freshly baked pizza. Just grab a piece without further delay and gorge on it guilt free. After all, you are having the 100% fresh-most pizza, yum in taste, all in the comfort of your home!

Now for the cheese, mozzarella cheese are the best. But since in Kolkata, Amul processed cheese cubes are readily available in the stores, I just use them all the time!!
